Another Thanksgiving has gone by...and this one was very special because we hosted it for the very first time! I am not really an avid cook so I am sure the family was a bit worried (as was I). And it had to be a gluten free, casein(dairy) free menu! Oh, and did I mention it needed to taste good, too?

Well, I am happy to report that it all turned out quite tasty. I spent a week scouring the the web for the best, tried and true gf-cf recipes.
We prepared the turkey in the ground in the grove, similar to a pig roast. My husband said he needed to practice doing in-ground roasts (for the big pig roast for his 50th birthday celebration-which is 4 years away, by the way!). The sides were home made mashed potatoes with vegan butter and cream cheese, Gravy made with homemade turkey soup, white rice flour for thickening and spices, Ginger citrus cranberry sauce, Roasted green beans with citrus and toasted almonds and cranberry toss, and sweet potatoe fries. My  dessert was an amazing Pumpkin Cake Roll which was moist and yummy! I had to to make 2 -one for the practice and one for real...both were gone in seconds!

See? Thanksgiving can be a delicious holiday even with diet restrictions-and if I can do it, anyone can do it!

Here are some recipes that tasted yummy:

Gravy GFCF

2 1/4 c chicken broth

2 tbsp rice flour

3-4 sprigs of fresh thyme

several leaves of fresh sage

salt and pepper

Boil chicken broth or stock  and while broth is heating, combine remaining broth with 2 Tbsp rice flour in a small bowl or mug. Stir thoroughly adding more flour as necessary utni you have a thick slurry that's still pourable.

When broth in pan starts to boil, reduce heat to low and slowly add the flour broth mixture and the herbs. Season generously with salt and pepper. Stir constantly for a few minutes to ensure that lumps don't develop. Gravy should be bubbling gently; cook to reduce to desired consistency and thickness. Salt and pepper as necessary.
